This asparagus frittata is a simple yet elevated dish made with fresh eggs, tender asparagus, and rich mozzarella. Finished until golden and fluffy, it’s perfect for brunch, lunch, or a light dinner.

Ingredients

6 large eggs

1 tablespoon extra virgin olive oil

1 tablespoon unsalted butter

1 bunch asparagus, trimmed

1 fresh mozzarella ball

Salt, to taste

Black pepper, to taste

Instructions

Preheat the Oven

Preheat oven to 350°F.

Prepare the Eggs

In a bowl, whisk the eggs with salt and black pepper until well combined.

Cook the Asparagus

Heat olive oil and butter in an ovenproof skillet over medium heat. Add the asparagus and cook for about 5 minutes, until just tender.

Add the Eggs

Pour the eggs into the skillet over the asparagus. Cook on the stovetop for 2–3 minutes, just until the edges begin to set.

Add the Mozzarella

Tear or slice fresh mozzarella into small pieces and scatter evenly over the eggs.

Bake the Frittata

Transfer the skillet to the oven and bake for 15–20 minutes, or until the frittata is set, golden, and the mozzarella is melted.

Serve

Remove from the oven and let cool slightly. Slice and serve warm or at room temperature.
