Tender, smoky eggplant, pan seared until lightly crispy, then coated in a rich, savory garlic sauce. This plant based dish is deeply flavorful and perfect served over steamed rice or noodles.

Ingredients

Eggplant

2 medium eggplants, sliced into bite-sized pieces
¼ teaspoon salt (for soaking method)
3 cloves garlic, minced
1 teaspoon fresh ginger, minced
2 tablespoons oil (for cooking)

Sauce

1–2 tablespoons cornstarch
3 tablespoons soy sauce
1 teaspoon sugar
1 teaspoon cornstarch
¼ cup water

Instructions

1. Prepare the Eggplant

Place sliced eggplant in a large bowl and cover with water. Stir in ¼ teaspoon salt and let soak for 15 minutes to prevent bitterness and excess oil absorption.

Drain thoroughly and pat completely dry.

Toss the dry eggplant with cornstarch until lightly and evenly coated.

2. Mix the Sauce

In a small bowl, combine light soy sauce, dark soy sauce, sugar, cornstarch, and water. Stir well and set aside.

3. Pan-Fry the Eggplant

Heat oil in a large skillet over medium-high heat.

Add eggplant in a single layer and cook until golden and lightly charred on the outside, turning occasionally. The inside should be tender.

Transfer cooked eggplant to a plate.

4. Cook the Aromatics

In the same pan, add a little more oil if needed.

Sauté garlic and ginger for about 30 seconds, until fragrant.

5. Combine and Finish

Return the eggplant to the pan.

Stir the sauce again (cornstarch settles), then pour it into the skillet.

Cook, stirring gently, until the sauce thickens and coats the eggplant evenly, about 1–2 minutes.

Serve immediately over rice or noodles.
