Bake Potatoes
Preheat oven to 425°F. Scrub potatoes and poke each several times with a fork. Bake directly on the oven rack for 40–50 minutes, until tender. Let cool slightly.
Prepare Skins
Cut potatoes in half lengthwise. Scoop out the centers, leaving about ¼-inch of potato inside the skin.
Season
Mix melted butter, fresh parsley, seasoned salt, and garlic powder. Brush inside and outside of each potato skin.
Crisp
Place skins cut-side down on a baking sheet. Bake 15 minutes. Flip and bake 5 more minutes until crispy.
Fill & Finish
Fill each skin with cheddar and bacon. Bake another 5–7 minutes until cheese is melted and bubbly.
Serve
Top with green onions and serve warm with sour cream or ranch.
