Keep It Fresh: Easy Meal Prep & Storage Tips for Summer’s Best Local Produce

North Carolina summer produce is bursting with flavor—sweet melons, juicy tomatoes, and crisp cucumbers picked at peak ripeness. With just a few simple prep and storage tips, you can make the most of your weekly box and enjoy effortless meals all week long. A little bit of prep goes a long way (literally!) by extending the life of your produce and making it easy to grab when you're ready for a nutrient-dense snack or meal.

Whether you're planning weekday lunches or weekend picnics, this guide helps you keep your produce vibrant, reduce food waste, and ease kitchen stress!

🍉 Mini Watermelons & Cantaloupes

Prep Tip: Slice a thin piece off each end of the melon to create a stable base. Stand the melon upright, then carefully slice down the sides to remove the rind. For cantaloupes, cut in half to scoop out the seeds first. Then, cut the melon into 1-inch thick rounds, stack, and slice into cubes. Store in a sealed container in the fridge for refreshing snacks or salads all week. You've now got your own hydrating fruit mix for half the price and none of the plastic from the grocery!

Pro Tip: Let the melon sit on the counter for 1–2 days to ripen slightly if needed, then refrigerate.

How to Eat: Add to a breakfast yogurt bowl, blend into a minty agua fresca, or toss with feta and basil.

🥬 Greens

Prep Tip: Some of our greens are pre-washed, like Community Greens' Arugula, Spring Mix, and Spinach, or our clean, hydroponically grown Bibb Lettuce, but we do sometimes offer loose lettuce heads, like green leaf, red leaf, or romaine, plus bunched kales. Wash your greens right away to save you time later when you're hungry -- and make sure to transfer them into a clean, dry plastic bag with a paper towel to absorb moisture! This will ensure your lettuce lasts up to a week if kept crisp.

Pro Tip: Reuse plastic produce bags for a planet-friendly solution—just rinse and dry after each use!

How to Eat: Toss with a simple vinaigrette (we prefer an oil:acid ratio of 3:1), or layer onto sandwiches.

🍅 Tomatoes

Storage Tip: Store ripe tomatoes on the counter—not in the fridge—to preserve texture and flavor. Once they're ripe, eat as soon as possible to prevent them from getting into mushy territory!

Pro Tip: If they’re overripe, or if you just have too many tomatoes than you can eat, make a quick batch of tomato jam or roast with olive oil and garlic for an instant pasta sauce.

How to Eat: Caprese salad, BLTs, or sliced with a pinch of salt and pepper.

🥒 Cucumbers

Storage Tip: Wrap in a dish towel and keep in the crisper drawer to avoid premature sogginess. That's what crisper drawers are for!

How to Eat: Add to salads, grain bowls, or slice for cucumber water all week. Cucumber water is an especially easy way to get the hydrating, electrolyte-rich benefits of cucumbers and salvage any cukes that are on the verge of going bad!

🌽 Sweet Corn

Storage Tip: Keep in the husk and refrigerate right away. Use within 3 days for peak sweetness.

Pro Tip: Boil and cut off kernels to freeze for soups or chowder later. It's the perfect way to capture Summer's harvest for enjoying on colder winter days! Our favorite way to enjoy in the moment is throwing corn on the grill, rubbed with butter and salt.

How to Eat: Grill it whole, fold into tacos, or toss with herbs and butter for a healthy, sweet side.

🍆 Eggplant

How to Prep: Slice off the stem, then cut into rounds or cubes depending on your recipe. If the eggplant feels spongy or has lots of seeds, lightly salt the pieces and let them sit for 20–30 minutes, then pat dry to reduce bitterness and moisture before cooking.

Storage Tip:Store whole eggplant at room temperature and use within 2–3 days. Once cut, store unused portions in the fridge wrapped in a beeswax wrap or sealed container and use within 1–2 days.

How to Eat: Roast with olive oil and garlic, cube and sauté for pasta or grain bowls, or slice into planks for grilling and layering in sandwiches or lasagna. 🫐 Berries

How to Prep:Wait to rinse berries until just before eating to prevent excess moisture and mold. If you prefer to wash ahead, rinse gently in a vinegar-water solution (1 part vinegar to 3 parts water), then pat dry thoroughly and store with a dry paper towel to absorb moisture.

Storage Tip: Keep berries in the fridge in their original vented container or transfer to a shallow container lined with a paper towel. Leave the lid slightly ajar for airflow. They’ll stay fresh up to 5–7 days when kept dry and cool.

How to Eat: Sprinkle over yogurt, oatmeal, or salads; freeze extras for smoothies; or cook down into a quick sauce for pancakes and desserts.
