While summer gives us bright reds, oranges, and greens, fall ushers in deep purples. From shiny eggplants to earthy potatoes to purple kale, plums, and muscadines, these shifting colors aren’t just a feast for the eyes—they tell a story about how plants adapt to the seasons, and why eating seasonally means eating the rainbow in its truest form.

Eating the Rainbow, Season by Season

You've probably heard the advice to "Eat the Rainbow," and that's because each color across the spectrum carries unique benefits:

Reds (tomatoes, strawberries): lycopene for heart health.
Oranges & yellows (squash, carrots): beta-carotene for vision and immunity.
Greens (spinach, kale): chlorophyll and iron for vitality.
Purples & blues (eggplant, blueberries, plums, purple potatoes): anthocyanins for brain and heart health.

Eating seasonally rotates these color groups naturally, fueling your body with what it most needs at different times of year.

Our menu is currently bursting with purple flavor! Here's a few quick ideas for how to make the most of this health-rich, hyper-local produce:

Organic Purple Potatoes → Roast with olive oil, rosemary, and sea salt until crisp.
Purple Blaze Garlic → Smash and roast whole cloves, then spread like butter on bread.
Red Cabbage → Shred into a slaw with local Gingergold apple, jalapeño, and lime.
Eggplant → Slice, brush with olive oil, and grill until smoky.
Indigo Rose Tomatoes → Toss with cucumbers, Sungolds, and basil for a jewel-toned salad.
Black Plums & Blueberries → Bake into a rustic crisp or enjoy fresh for a sweet, antioxidant-rich snack.

Quick Recipe: Sauteed Eggplant

Adapted from Wholesome Yum

Ingredients

1 Globe Eggplant
1/4 cup Olive Oil
1/2 tsp Garlic Powder
1/4 tsp Black Pepper
1/4 tsp Sea Salt

Instructions

Slice the eggplant crosswise to make circles, about 1/4 inch (6 mm) thick. Cut off the leafy end only after you are done slicing, so that you'll have more to grab onto as you slice. If the slices are damp, pat them dry. Optional: you can salt the eggplant and let it pull out some of the water and bitterness for about 20 minutes prior to cooking, but this step isn't necessary in this recipe.
Sprinkle the eggplant slices on both sides with garlic powder, sea salt, and black pepper.
Heat 2 tablespoons of olive oil in a 12-inch nonstick skillet over medium-low to medium heat. Working in batches, add the eggplant slices in a single layer. Saute eggplant for 3-6 minutes per side, until soft, browned, and caramelized on both sides. Don't move the eggplant around, except for flipping, as this will give you the flavorful browning on both sides!
Repeat with the remaining eggplant slices, adding about 1-2 tablespoons of oil per batch.

Recipe: Roasted Purple Potato & Garlic Mash

Ingredients

1 head Purple Blaze Garlic, roasted
¾ cup Olive Oil
10 sprigs fresh thyme
2 lbs purple potatoes, boiled and mashed
½ cup sour cream
½ cup milk
½ tsp salt
¼ tsp freshly ground pepper

Instructions

Preheat oven to 400°F. Rub off excess papery skin from garlic head without separating the cloves. Slice the tip off the head, exposing the cloves. Place the garlic in a small baking dish, such as a bread pan. Drizzle with oil and lay thyme sprigs around it. Cover with foil. Roast until very soft, 30 to 45 minutes.
In the meantime, wash and boil approx 2lbs purple potato, cubed, for 25-45 minutes (sometimes purples take a bit longer than other potato varieties). When you can pierce through with a fork, they are done.
Once cooled, squeeze the garlic cloves out of their skins into the bowl with the potatoes already slightly mashed. Strain the oil through a fine sieve over the potatoes, pressing on the solids (discard the thyme). Add sour cream, milk, salt and pepper; mash to desired consistency.
Mash everything together with a fork or potato masher, adding butter or more olive oil as desired.
Top with fresh herbs and serve alongside your favorite fall mains!
